This smoky, sweet and earthly puree can be used to spice up many dishes, such as rice or beans dishes, but can also be used in soups or salads. It works really well as a spread on a tortilla, or pita roll with avocado. It can furthermore be used to marinate tofu, egg plant or courgette.
